Watermelon, feta, cucumber and mint salad

Ingredients

180g watermelon

½ cucumber

½ bunch mint

1 tbsp olive oil

100g feta

1 tbsp balsamic glaze

 

Method

Chop 180g watermelon and ½ cucumber into chunks, tip into a bowl with the leaves from ½ bunch mint (reserving a few for garnish) and drizzle with 1 tbsp olive oil. Season and pile onto a serving plate. Crumble over 100g feta and the remaining mint leaves, then drizzle with 1 tbsp balsamic glaze before serving.

Serve this refreshing salad, bursting with fresh summer flavours, as a side dish at a braai or picnic.
